50% of the blend is Pinot Noir (the rest is Pinot Meunier hence Blanc de Noirs classification). It's hand-selected from the family's vineyards in Damery, the village where Sébastien's great grandfather started it all back in 1928 - and the place for top-quality Pinot Noir.
Sébastien is famed for his commitment to his vines and as both grower and winemaker he has complete control over what he produces - albeit in tiny volumes. Most Grandes Marques have to buy their grapes in. Sébastien ages his Brut Classic 'sur lie' (on its lees) for 18 months for deep toasty flavours and extra complexity.
A high proportion of Pinot Noir means Champagne of terrific body and complexity - but it needs the careful handling of a real master. This is wonderfully rich and toasty with fine bubbles and mouthwatering freshness. Serve on its own, with canapés or shellfish.
